What is escabeche? You’ve seen it at taco bars (except there it’s usually quick-pickled, not fermented!) It’s a delicious and mildly spicy mix of chopped veggies.
I cut out the seeds and membranes from the pepper; so they’re spicy but not fireball hot (about 2 out of 5 stars spicy).
